i want to surprise my wife with a nice copper pan set for christmas but i dont know much about it. whats the best: tin lining or stainless steel lining? can anyone advise me what the advantages are of either of them? i want the copperware to last many years so i need to make the right choice thanks a lot
It all comes down to personal choice and preferences.
Tin lined copper cookware heats up quicker + more even & uniform (better heat-conductor), yet requires wooden & silicone utensils (spoons, whisks).
Stainless steel lined copper ware allows the use of metal utensils, but heats up slower & is usually much more expensive.
